Tofu Mayonnaise


It's been an uphill battle for me to try and complete the many salad dressings and sauces in the New Moosewood Cookbook. Through this process I have discovered one big thing: I don't really use salad dressing  or sauces that often. Thankfully, I am nearly done with these recipes. Every time I make one, I try to do a half recipe.

Now, I've made something similar before, but I felt like I should make this particular recipe too.With this Tofu Mayonnaise I decided to spice it up a little bit by adding adobo sauce with chipotle peppers. I think it really helped masked any sort of tofu flavor that might sneak through.

I simply stirred the chipotle sauce in after making the mayo.

The result is a super smoky, spicy, tastes-fancier-than-it-actually-is condiment for your sandwich, fries, or even just a dip for fresh veggies!

    1. Silken tofu, salt, apple cider vinegar, and a dash of mustard! Not really my thing. Gonna stick with regular mayo from here on out!
