I made Tomato Chutney earlier this week and have been enjoying it nearly everyday since. It was very easy to make! Basically, you chop up tomatoes, add sugars, vinegar, and spices, and put it in a pan.
Then you let it cook into oblivion! It turns into a lovely sauce. Not quite a jam, more like ketchup than anything, really.
We've been enjoying this chutney on some really simple breakfast sandwiches with a perfect fried egg and spinach.
