Grilled Pepper, Onion, Chinese Mustard, and Tofu Sandwich
This isn't your run-of-the-mill grilled cheese, folks. This is one serious sandwich! I made the Grilled Pepper, Onion, Chinese Mustard, and Tofu Sandwich to accompany our Gazpacho. This sandwich was seriously delicious and so good for you! You won't miss the cheese, I promise.
I began by making the Chinese Mustard: mustard, sesame oil, cider vinegar, honey, and minced cilantro.
Then I cooked the red onion and red bell pepper on the stove.
I spread Chinese Mustard of each slice of lightly toasted bread.
Then I put thin slices of firm tofu and the cooked onions and peppers on the bread. I am glad I put the tofu right on top of the mustard as it soaked up the delicious flavors in the sauce!
Each sandwich was topped with another slice of lightly toasted bread and then cooked on the stove for just a minute or two on each side. I liked this technique and will try it again for future sandwiches!
The sandwich was crunchy and filling and full of flavor!
