Succotash Chowder

Tonight I made Succotash Chowder for my mom and I. We agreed that it was way better than any sort of seafood chowder!

Instead of using lima beans, which the recipe called for, I used edamame. I liked the clean, firm texture of the beans. I also used frozen corn fro Costco, which is both organic and seriously tasty. I highly recommend the Costco frozen corn! I also used lowfat milk in the soup, which made for a filling but not fattening meal.
