Old Country Pie


Old Country Pie is a delicious quiche with just a skosh of egg and a LOT of vegetables. Here's the round up: onion, mushroom, broccoli, carrot, garlic, green onions... I also added spinach and cauliflower in place of cabbage. A superb dinner pie, dense and seasoned nicely.

Swiss Cheese and Mushroom Quiche


I cheated a little when I made Swiss Cheese and Mushroom Quiche this evening by using a frozen pastry crust. But by doing so, it made the dinner pretty quick!

The quiche had a base layer of Swiss cheese, then a warm mushroom and onion mixture, with a custard on top. I sprinkled paprika over the whole pie and baked for about an hour. There was a little too much filling for the pie crust, so I also made a small souffle!

Spinach Ricotta Pie

I made Spinach Ricotta Pie for a Super Bowl Party. Creating and assembling the pie crust a day in advance was a time saver. The filling has fresh spinach, ricotta, sharp cheddar cheese, onion, spices, and Sunday morning sleepies in it. Sour cream and a little paprika were spread on top right before baking. The pie was rich and creamy and was a wonderful accompaniment to my vodka cocktail. Go football teams!
