Gingery Marinated Chick Peas

Here it is, the third to last recipe from the New Moosewood Cookbook, my friends! I have been putting off making these Gingery Marinated Chick Peas because, well ... I don't really like garbanzo beans. After my five-year old charge said he'd eat them, I decided it was time to do it.

Olive oil, lemon juice, garlic, fresh ginger, red wine vinegar, and some minced red onion go into a bowl with garbanzo beans. The hardest part of making this was letting the beans marinate ... so simple!

Bob tried a spoonful of these beans and said, with a nonchalant shrug, "Pretty good."
