Stuffed Cabbage with Cashew-Ginger Sauce

Stuffed Cabbage with Cashew-Ginger Sauce was a daunting recipe when I first began this project. So, like any normal human being, I put it off. I finally decided to conquer it today. It wasn't nearly as complex as I imagined it to be. I started by making the sauce in a blender. I combined toasted cashews, ginger, soy sauce, brown sugar, cider vinegar, salt, cayenne, and a little water.


Next I took on the cabbage. I cored and cooked a whole cabbage on the stove to soften the outer leaves.


Then I made the filling by combining onion, garlic, carrot, celery, cottage cheese, sunflower seeds, tart apple, raisins, lemon juice, and soy sauce. The only amendment I made to the original recipe was using cottage cheese instead of ricotta cheese and I think it worked out fine.

Next, assembling the dinner.


I filled each cabbage leaf with about three tablespoons of filling.


The leaves were soft and pliable, making it easy to fold in the sides and roll each one up, like a veggie gift.


Lastly, I covered the stuffed cabbage with the cashew sauce and baked them in the oven.  The dinner was a little difficult to cut up, but tasted very fresh and healthy.

  2. Ha! Kirsten, I think you can see right through my lies ... I was trying to be nice to the stuffed cabbage with words like "fresh" and "healthy." But the truth is, this wasn't very good. I think it had potential, but the filling needs to be altered. No apples and raisins for me, and definitely no cheese of any kind. I think a bunch of savory veggies cut up really fine, like the inside of a vegetarian egg roll, would be WAY better than what I had. I'm glad I made it, but the flavors were a little weird.

    Jeez, if I can be this harsh in the comments section, I should probably just say it in my journal entry!!

  3. Haha. Sorry, I didn't see this until now. Need to check the follow-up comments box. I'll see if I can find the recipe in my Moosewood and make it to see what you mean. Or I could truly utilize your blog and never make this :)

  4. OK, this is very funny to me that you mention the comments section because I regularly forget to go back and check comments I have left on yr blog so from time to time I will go back and read your thoughtful replies!

    Also, for some reason, I have the hardest time getting my comments to stick when I write on your blog! I will type stuff and then Firefox will eat it! I always have to post through Internet Explorer. It is weeee-uhhhhd!

    Anyways, stay tuned, I am making vegetarian stew tomorrow :)
