White Bean and Black Olive Soup
Oooohwee! What a delicious soup! I made White Bean & Black Olive Soup tonight for dinner. It was wonderful; so many delicious veggies with just the right amount of tomato based broth.
I started by heating onion, celery, carrot, zucchini, garlic, and red bell pepper in a kettle. I added basil, oregano, and salt to the pot. After everything softened, I added a small amount of tomato paste and water. Then white beans and sliced black olives went in and everything heated up nicely. This was a pretty simple soup to make. I am already looking forward to the leftovers!
