I love that the description for Lentil Soup in Moosewood is just "...gentle." So simple. Lentils aren't very pretty, but they make a nice soup and really fill you up!
This recipe required lots of simmer time... lentils simmered in water, then I added some veggies and herbs, and the soup simmered some more. Next time I will use more water, as most of the water in the kettle this time around boiled off. I added more, for a truly soupy consistency.
