Ratatouille


Ratatouille is a Mediterranean vegetable stew. It has many veggies in it, which are cooked down with herbs and spices, and in my case, served over pasta with some shaky cheese on top.  The veggies in ratatouille were:

garlic
onion
eggplant
zucchini
red bell pepper
tomato
olives

The herbs and spices I added were:

bay leaf
salt
basil
marjoram
oregano
rosemary
thyme
fresh black pepper

Pretty intense, huh?  I think the stew went well with the pasta, because it was like a seriously seasoned marinara sauce. The sliced olives on top were an extra salty treat.
